分詞が名詞を前から修飾するパターンの復習です。defend は「（タイトルを）防衛する」という動詞。それが …ing 形（現在分詞）になると、「タイトル防衛をするチャンピオン」＝「タイトル保持者」になります。

pack は「～を詰める」という他動詞で、packed という過去分詞にすると packed lunch（詰められたランチ＝昼の弁当）になります。このような分詞を使ったおなじみのフレーズをたくさん知っていると表現がより一層豊かになります。
